 Ingredients (Serves 4–6)
- 200 g white chocolate (high quality, chopped)
- 300 ml heavy cream (cold)
- 3 large eggs (separated)
- 2 tbsp sugar
- 1 tsp vanilla extract
- A pinch of salt
 Instructions
1. Melt the Chocolate
- Place the white chocolate in a heatproof bowl.
- Melt it gently over a double boiler or in the microwave (in short bursts).
- Stir until smooth, then let it cool slightly.
2. Whip the Cream
- In a cold bowl, whip the heavy cream until soft peaks form.
- Refrigerate while preparing the rest.
3. Prepare the Egg Base
- Beat the egg yolks with sugar until pale and creamy.
- Add vanilla extract and mix well.
- Slowly fold in the melted white chocolate.
4. Whip the Egg Whites
- Beat egg whites with a pinch of salt until stiff peaks form.
